      近期,我們尚海派延安西路店和大眾點(diǎn)評(píng)網(wǎng)攜手做了一期團(tuán)購(gòu),雖然銷售成績(jī)還差強(qiáng)人意,但在實(shí)際接待過(guò)程中,卻暴露出很多問(wèn)題,對(duì)此,我們致以真誠(chéng)的道歉。為了不讓大家失望,我們已經(jīng)采取具體措施做出調(diào)整和改進(jìn):

      1、空調(diào)問(wèn)題

      我們已經(jīng)委托美國(guó)開(kāi)利空調(diào)的售后服務(wù)人員進(jìn)行了全面檢查,由于延安西路店所在酒店物業(yè)長(zhǎng)期未對(duì)中央空調(diào)的電磁閥進(jìn)行保養(yǎng),致使28只電磁閥中25只已損壞,對(duì)此我們正委托專業(yè)技術(shù)人員進(jìn)行更換,由于每只電磁閥的更換程序比較復(fù)雜,因此所有電磁閥更換完畢至少需要一周的時(shí)間,但是在此期間,更換好的營(yíng)業(yè)空間,制冷效果已經(jīng)可以滿足營(yíng)業(yè)需要,請(qǐng)大家放心。

      2、菜肴出品

      由于我們事先準(zhǔn)備不充分,部分菜肴專用的器皿數(shù)量不足,致使團(tuán)購(gòu)菜肴出品時(shí)器皿使用不當(dāng),現(xiàn)該部分的器皿已經(jīng)補(bǔ)充到位,足夠滿足營(yíng)業(yè)需要。菜品質(zhì)量方面,我們已經(jīng)指派專門工作人員嚴(yán)把出品關(guān),在菜肴的色、香、味、形、量方面嚴(yán)加把控,不符合尚海派出品要求的菜肴一律不得出品。

      3、服務(wù)質(zhì)量

      57℃湘是新主義餐廳,采用拼桌式就餐,增加客人間的互動(dòng)溝通。開(kāi)業(yè)期間部分就餐時(shí)段需要排隊(duì)拿號(hào),有些號(hào)數(shù)靠后,卻先進(jìn)場(chǎng),這個(gè)情況的原因是,進(jìn)場(chǎng)都是看剩余的餐位數(shù)安排入客,例如目前出來(lái)3位客人,就空閑3個(gè)就餐位置,號(hào)數(shù)靠前的如果就餐人數(shù)都超過(guò)3人,那么只能安排就餐人數(shù)3人及號(hào)數(shù)靠前的客人先入場(chǎng)。請(qǐng)小伙伴們理解,并不是我們不按號(hào)數(shù)安排入客。

      侯位就餐期間燥熱問(wèn)題

      菜肴出品:由于我們事先準(zhǔn)備不充分,部分菜肴專用的器皿數(shù)量不足,致使團(tuán)購(gòu)菜肴出品時(shí)器皿使用不當(dāng),現(xiàn)該部分的器皿已經(jīng)補(bǔ)充到位,足夠滿足營(yíng)業(yè)需要。菜品質(zhì)量方面,我們已經(jīng)指派專門工作人員嚴(yán)把出品關(guān),在菜肴的色、香、味、形、量方面嚴(yán)加把控,不符合尚海派出品要求的菜肴一律不得出品。

      服務(wù)質(zhì)量:由于最近服務(wù)量的突然增加,很多工作人員在精力及體力方面未能馬上適應(yīng),出現(xiàn)了身體及情緒方面的不適,這給大家造成了不良的服務(wù)體驗(yàn)。在目前餐飲這個(gè)勞動(dòng)高度密集型的行業(yè)里,服務(wù)人員大多是來(lái)自農(nóng)村的孩子,她們第一次離開(kāi)家庭的呵護(hù),只身來(lái)到上海,為在上海生活的大家提供服務(wù),在很多方面他們還有不足的地方,如果再碰到不開(kāi)心的客人大聲呵斥幾句,她們都能哭上好長(zhǎng)時(shí)間。所以,在此也希望大家能夠諒解她們的辛勞與付出。經(jīng)過(guò)這階段的適應(yīng)之后,她們已經(jīng)反省總結(jié),認(rèn)識(shí)到工作中的不足之處,現(xiàn)已能夠很好地調(diào)整自我并投入工作,擦干眼淚,她們依然堅(jiān)強(qiáng)地表示“一定會(huì)把客人服務(wù)好,哪怕再苦再累,一定要讓客人感到滿意?!憋L(fēng)雨之后才能見(jiàn)彩虹,我們現(xiàn)在正在經(jīng)歷風(fēng)雨,希望在我們的不斷努力下,能與一直關(guān)心尚海派的大家一起欣賞美麗的雨后彩虹,我們相信這道彩虹是我們大家一起創(chuàng)造的世界上最美的一道彩虹!
