      高考菜譜:幾種營養(yǎng)湯做法

      鮑魚大蝦撈面

      原料:鮮鮑魚一只、對蝦一個、香菇一朵、面條、西藍花。

      調(diào)料:瘦肉、蔥姜、八角、鹽、生抽。

      做法:

      1、香菇焯水,蝦和鮑魚處理干凈。

      2、把處理干凈的鮑魚放入砂鍋里(有水和清湯),砂鍋里加入一小塊瘦肉,放蔥姜,八角和鹽等和鮑魚一起燉煮,煮至鮑魚熟透,下入對蝦和香菇,加入

      一點生抽調(diào)色。

      3、面條煮好,把煮好的湯和澆頭放上面。

      食必躬親~~~阿二鮑魚

      材料:鮑魚、雞高湯、肉排湯、大骨湯、胡蘿卜絲50g、幾個蔥段、一片姜、細粉絲50g、蠔油。做法:

      1、沖洗干凈后,掛凈它身體上面類似舌苔一樣黑顏色的東西。

      2、把平時準(zhǔn)備的雞高湯、肉排湯、大骨湯混合,加熱,加50g的胡蘿卜絲,幾個蔥段、一片姜。

      3、湯開后,加50g細粉絲,調(diào)蠔油。

      4、湯滾后,撈出蔥姜,入鮑魚文火20分鐘。轉(zhuǎn)小火1小時,撈去表面的浮沫。

      5、最好放置一夜,讓鮑魚有個吸收湯汁過程。十幾個小時后的鮑魚顏色轉(zhuǎn)金黃,肉的里外色澤一致就可以吃咯。外面的通常是人工加色,到客人點食時再給鮑魚加熱、埋芡和潑汁。如此看來,食必躬親自然來的放心多咯~~~~~

      紅燒鮑魚

      配料:鮮冬筍(竹筍)250克,熟火腿(金華火腿)100克。

      調(diào)料:紹酒、醬油、精鹽、味精、白糖、豬油、雞油、玉米粉、奶湯、蔥、姜、蒜。制作過程:

      1、每個鮑魚都撕去毛邊,兩面剞成花刀,再片成兩片;竹筍中含有較多的草酸,烹調(diào)前要沸水焯處理,以去除草酸;熟火腿均切小骨牌片;蔥、姜、蒜切成指甲片。

      2、油鍋置火上,下入底油(豬油);油熱時,將蔥片、姜片、蒜片略 煸,依次下入醬油、奶湯、冬筍片、熟火腿片,燒沸后用精鹽、紹酒、白糖、胡椒粉調(diào)好口味,再放入鮑魚,燒至入

      味后,用玉米粉勾芡,加入味精攪勻,淋些雞油,即可出鍋裝盤。

      鮑魚食性平,味甘、咸、具有滋陰、清熱、益精、明目的功能。適宜陰虛之人骨蒸勞熱、肺結(jié)核干咳無痰、手足心熱、婦女陰虛內(nèi)熱、月經(jīng)過多、白帶多、更

      做法:

      1、秋刀魚內(nèi)外洗凈晾干,魚身小牛貼心提示:

      1、秋刀魚本身有少許斜刀劃上幾道刀口;

      2、刷上橄欖油,咸味,如果腌漬魚的調(diào)味粉里也含有鹽均勻撒上孜然粉、辣椒粉、黑胡椒、海分,記得海鹽的用量要少,以免太咸;鹽、稍稍按摩魚身;

      3、烤箱開Broil2、喜歡更入味,可以多腌制10-15分檔,中層放入秋刀魚,每面烤5分鐘鐘,撒腌制粉的時候可以把魚身弓起,(中途翻面);

      4、取出吃前擠少許檸使腌漬料撒到刀縫里;

      3、烤箱的Broil檬汁即可。

      檔就是烤箱上層最大火力,烤的時候秋刀魚會滲出少許水,要選有底的烤盤;

      4、為了節(jié)省能源,可以同時串上幾串蔬菜串一起烤,蔬菜串上刷油、撒胡椒粉、鹽調(diào)味;

      5、各家烤箱功力不同,原則上只要看到魚身微焦、刀口裂開即

      可;

      6、沒有烤箱,用平底鍋小火干煎也是可以的。

      自家DIY的鹽烤秋刀魚

      原料:秋刀魚、鹽、黑胡椒碎粒、檸檬汁。做法:

      1、秋刀魚去除內(nèi)臟魚腮,洗凈瀝干;

      2、用鹽抹在秋刀魚上,并灑上少許黑胡椒碎粒、加些檸檬汁腌30分鐘左右;

      3、用水沖干凈魚的表面(腌制后會有血污),用刀在魚身上劃幾刀;

      4、烤箱預(yù)熱250度。烤盤墊錫紙,并

      涂抹一層油,將腌制好的秋刀魚排放在烤盤上;

      5、再在魚身上灑些鹽,烤15-20分鐘至表面金黃(中間翻一次面),取出滴

      上檸檬汁即可。秋刀魚的滋味

      材料:秋刀魚、姜、蔥、蒜、糖、鹽。做法:

      1、洗干凈魚,用姜蔥蒜、糖、鹽淹30分鐘~

      2、熱鍋溫油,放入秋刀魚~

      3、中小火三分鐘,翻個身~

      4、魚身每面各翻兩次,就OK了~

      5、撒點芝麻在烤好的秋刀魚上~ 搭配上米飯就可以吃咯~~味道鮮極了。

      檸香煎秋刀魚的做法

      個人口感:

      檸檬的清香滲透到魚肉中,沒有其它調(diào)味料的添加,使魚肉本身的味道更加清新。

      材料:秋刀魚3條、檸檬4分之1個、鹽3克。做法:

      1、秋刀魚洗凈,去鰓,用一根筷子伸入魚肚內(nèi),攪一下。

      2、取出魚的內(nèi)臟,沖洗干凈,擦干魚身。在魚身上適當(dāng)?shù)膭潕椎馈?/p>

      3、把鹽均勻的涂抹在魚身上,腌制5分鐘左右。

      4、鍋里放底油,8分熱左右放入腌制好的秋刀魚。

      5、煎至一面金黃,翻面,繼續(xù)煎至另一面金黃。趁熱淋上檸檬汁。后記:

      1、魚的內(nèi)臟不要像收拾其它魚一樣,破肚去除,會影響口感。

      2、煎魚時的油溫一定要稍熱一些,魚皮不容易破。

      3、淋檸檬汁除了會使魚肉更美味,還有去除魚腥的作用。紅燒秋刀魚

      原料:

      秋刀魚、蔥姜、肉餡。

      做法:

      1、秋刀魚去腸洗凈,切成幾段,蔥姜切末;

      2、平鍋熱后煎秋刀魚,兩面金黃即可;

      3、用老抽白糖干煸一下肉餡(我這里是

      前一天炸的醬,所以用的現(xiàn)成的);

      4、另支鍋把蔥姜大料爆香,放入煸好的肉餡,秋刀魚,加水紅燒;

      5、期間放一點五香粉和老抽,直到水分燒干為止。

      竹笙鮑魚燉雞湯

      原料:

      活鮑魚2個、土雞半只(約250克)、濕竹笙120克、姜2片、水1200毫升。調(diào)味料:

      紹興酒少許、鹽適量。做法:

      1、將竹笙泡水30分鐘;

      2、將鮑魚洗凈后備用;

      3、將土雞切塊后氽燙,撈出備用; 特點:

      4、把所有材料放入燉盅內(nèi),加入紹興活化肌膚,補充營養(yǎng)。酒及熱水燉煮2小時,起鍋前加入鹽小貼士:

      調(diào)味即可。

      處理新鮮鮑魚,最方便而省力的方法是將鮑魚放在砧板上,磨除其底部污垢,然后清洗干凈即可。

      泡水30分鐘→洗10分鐘→切3分鐘

      →氽燙10分鐘→燉煮120分鐘→調(diào)味1

      分鐘→盛碗1分鐘。

      韓式海鮮煲圖解做法

      烹制方法(四人份)材料:韓國泡菜(175克,1袋),黃豆芽(750克)、白貝(2兩)、鮮魷魚(2兩)、羅氏蝦(7兩)、生蠔(3兩)、姜(4片)、姜蓉(1湯匙)

      調(diào)料:油(3湯匙)、醬油(1/2湯匙)、鮑魚汁(1湯匙)、胡椒粉(1/5湯匙)、鹽(1湯匙)、糖(1/4湯匙)工具:瓦煲(1只)

      做法:1 黃豆芽去根,清洗干凈;將生姜去皮切成4片,剩下的剁成姜蓉; 將白貝泡在清水里待用;羅氏蝦剪去蝦須后洗凈。魷魚洗凈切成圈,加入1/2湯匙姜

      蓉、1/2湯匙醬油、1湯匙鮑魚汁、1/6

      湯匙鹽和1/4湯匙糖拌勻,腌制5分鐘。生蠔洗凈,灑入1/2湯匙姜蓉、1/6湯匙鹽和1/5湯匙胡椒粉拌勻,腌制5分鐘。燒熱瓦煲,放3湯匙油,爆香姜片,撕開泡菜封口倒入泡菜翻炒兩分鐘,倒

      入1/2瓦煲的清水,將洗好的黃豆芽放進瓦煲,加蓋大火煮沸。依次放入羅氏蝦、白貝、魷魚圈及生蠔,加蓋大火燜煮8~9分鐘,待煲里的白貝開口后,加1/5湯匙鹽調(diào)味,即可上桌咯!

      廚神貼士

      1、生蠔灑少許胡椒粉和姜蓉,可起到去除腥味的作用。

      2、袋裝的韓國泡菜有大有小,大包裝里有半顆白菜,最好先切成段再下鍋,吃時夾取比較方便;小包裝則不用。韓

      國泡菜本身已有咸味,海鮮煲煮好后,加少許鹽味便可。

      3、白貝的外殼和肉都是白色的,其肉質(zhì)鮮美,煮湯清炒兩相宜。建議白貝下鍋前,先用清水泡一晚,讓它吐干凈沙子,吃起來就不嗑牙了。

      4、黃豆芽是黃豆所發(fā),綠豆芽是綠豆所發(fā),兩者味道不一樣,綠豆芽較嫩,吃起來清淡爽口,適宜炒著吃,黃豆芽較硬,適宜做湯喝。

      5、去豆芽皮的方法:將豆芽用水浸泡一段時間,豆芽皮就會鼓起來,只要輕輕一擠,豆和皮就會分開了,或用熱水焯一下,豆和皮自然就分開了。清蒸平魚

      原料:新鮮平魚一條(最好是活魚)。

      配料:李錦記蒸魚豉油、色拉油、蔥絲、姜絲、青紅辣椒絲各適量(俺沒有紅辣椒用了胡蘿卜絲代替)。做法:

      1、將魚宰殺清洗干凈去內(nèi)臟,在魚身上切菱形刀塊。

      2、取一個盤子,盤底鋪上蔥姜絲將魚放在上面,然后在魚上面也放上蔥姜絲。

      3、蒸鍋燒水,水開后將處理好的魚放進蒸鍋,大火蒸8分鐘出鍋。

      4、拿掉魚身上已經(jīng)蒸熟的蔥姜絲,在魚上擺上新鮮的蔥、姜、青紅椒絲。

      5、將李錦記蒸魚豉油放到小碗里在微波爐里加熱,然后澆在魚上。

      6、最后將色拉油燒開澆在魚上即可。馬師傅教您5分鐘就能做出酒店級黃金大蝦

      原料:

      大對蝦2只、雞蛋2個、生菜若干(裝飾用)、香菜梗數(shù)根。

      做法:

      3、去蝦頭,剝蝦殼,留蝦尾。去泥腸;

      4、用刀背將蝦的纖維拍松;

      8、馬師傅在蛋液里加了香菜梗末,又香又增色;

      10、最后鍋上一層面包糠;馬師傅說金色的面包糠炸出來顏色更好看;

      11、這是做好準(zhǔn)備工作了的蝦肉。已

      經(jīng)初具雛形了;

      12、下油鍋炸。5成油溫,我看大概40秒的樣子就好了。實際看蝦的大??;(馬師傅說感覺蝦肉變硬就可以,用筷子碰碰有點硬了就基本好了;)

      13、最后一定要配這個好看的甜辣醬,味道真當(dāng)不錯,我吃到了。

      第五篇:年夜飯菜譜

      自制Majito 材料:薄荷、砂糖、黃檸檬、青檸檬、朗姆酒、蘇打水、冰塊

      百合魷魚卷

      材料:魷魚、干百合、綠椒、大蒜、姜、香蔥、紅椒、水淀粉、白胡椒粉

      1.將魷魚清理干凈,平放在案板上,右手用刀按住魷魚,左手使勁撕掉小尾巴在小尾巴的部位揪住皮,使勁撕,魷魚皮就能大面積的撕掉了。2.魷魚內(nèi)壁朝上,先按四十五度切出一道道平行的花紋,切到肉厚的四分之三處就可以了。3.然后根據(jù)剛才的平行花紋,轉(zhuǎn)九十度繼續(xù)切,切出十字花刀。(切好十字花刀的魷魚)。4.把切好花的魷魚片分割成你想要的大小,魷魚的觸手切小段備用。5.魷魚入沸水燙三十秒,漂亮的魷魚花就卷成魷魚卷了,撈出瀝水。6.把萬字醬油,鹽,糖,白胡椒粉,水淀粉在碗中調(diào)勻。

      7.干百合用水泡開,紅綠椒分別切成小塊。蒜姜切片,香蔥切小段備用。8.鍋中熱油,大火將蒜姜片爆香,然后入紅綠椒和百合翻炒數(shù)下。9.放入魷魚卷,快速翻炒幾下。10.倒入調(diào)好的醬汁。

      11.炒勻后,撒入蔥段,關(guān)火即可。

      清蒸鱘魚

      材料:鱘魚,蔥姜,料酒,花椒,鹽,蒸魚豉油 1.鱘魚讓賣家殺好,回來清洗干凈血和粘液,(因為此魚魚骨在外,表面粘液又多,所以最好帶個手套別傷了手,表面粘液可用刷子刷一下)

      2.清洗好的魚身兩側(cè)打花刀,抹適量鹽和料酒,魚腹中塞入蔥段和姜片,腌制三十分鐘左右。

      3.蒸鍋加水先燒開,將腌好的魚上鍋蒸制8分鐘左右,取出,撿出蔥姜,沿魚身倒入2--3勺蒸魚豉油。如果味道夠,生抽就少加,如果味道淡,可多加點兒生抽 4.魚身表面撒蔥絲,5.炒鍋中加入2--3大匙植物油,炸香花椒粒后與油一起順魚身澆下即可食用。6.魚肉剖開,皮下有一層黃色,是魚油?蒸好之后的湯金黃金黃的,鮮的不得了

      鮮蝦土豆餅

      材料:鮮蝦8支、土豆2個、面包糠50g、雞蛋1個、鹽20g、黑胡椒1g、白胡椒1g 1.土豆去皮切塊、蒸熟、用筷子扎透 2.鮮蝦去頭、蝦腺

      3.土豆蒸熟后,趁熱搗成土豆泥,加入鹽、黑胡椒、白胡椒,拌勻后分成8份

      4.待土豆泥稍微冷卻不燙手了,用手取一份土豆泥搓成橢圓形,用手指在中間按一個凹槽,把蝦放在里面慢慢包裹好備用 5.把裹好的胚在蛋液里沾一下 6.在放入面包糠中裹滿面包糠 7.烤盤墊不粘油紙張,地底部刷少量油,把做好的鮮蝦胚子碼入烤盤內(nèi),烤箱預(yù)熱200度,中層15分鐘

      手抓羊肉

      材料:羊排、料酒、花椒、八角、干辣椒、陳皮、蔥、姜、蒜、生抽、香油、辣椒

      1.選擇上好的羊排肉,最好是肥瘦相間的,羊排切開,切完之后洗白白 2.熱水燒開,把切好的羊排下水過一下血沫,撈上來

      3.重新做水燒開,放入羊排大火燒開后轉(zhuǎn)中小火,加入料酒、花椒、八角、干辣椒、陳皮、蔥姜,4.燉兩個小時左右,加入適量鹽,再燉半個小時,就可以出鍋了

      5.汁的方法其實很簡單,把姜和蒜切碎了加入六月鮮生抽,再加入一點點香油和辣椒就OK了

      小鮑魚燜排骨

      材料:豬小排、鮑魚、花生油、鹽、蔥、姜、蒜、八角、桂皮、生抽、老抽、香油、白糖、江米酒、水 1.小鮑魚取出清洗干凈,表面像切魷魚花一樣打上三分之二深花刀(千萬別切斷),排骨沖洗干凈,然后放入清水里凈泡30分鐘,中途翻動幾次,泡出血水撈出

      2.鍋里放入適量的清水,加入1湯匙米酒,放入排骨,然后用清水洗凈排骨表面的浮沫,鍋中放油爆香大蔥、姜片和蒜瓣

      3.放入排骨煸炒至表面微焦黃,加入小鮑魚,淋入1湯匙米酒

      4.再放入生抽和糖煸炒,倒入鑄鐵鍋,放入八角和桂皮,加入沒過排骨的開水

      5.大火煮開后,蓋上鍋蓋,調(diào)小火燜煮30分鐘左右,然后開蓋大火收汁,此時可根據(jù)個人口味加鹽、白糖或老抽上色,臨出鍋前淋入幾滴香油提色增香

      6.排骨一定先要泡水,再要出水,這樣才能將骨頭的血水逼水,更好地去除腥味,出水的時候放點米酒有去腥的作用;

      7.加入大蔥會讓這道菜更香;煸炒排骨和小鮑的時候,加入生抽和糖一塊去炒,會讓排骨和小鮑上色更漂亮;

      8.開水沒過排骨表面即可,不要加多了,如果放多了,30分鐘后可以倒出來一些,再大火收汁;

      繽紛開邊蝦

      材料:海蝦、彩椒、香蔥、鹽、油

      1.海蝦去除蝦線,用剪刀從蝦尾往蝦頭方向剪,不要剪穿; 2.彩椒切成碎粒,香蔥末,用一點點鹽腌一下,填入蝦背內(nèi);

      3.平底鍋放底油,蝦一個個碼好,中小火煎,蝦稍微變色的時候加入一小勺開水,蓋蓋子燜1分鐘;

      雪豆蹄花湯

      材料:豬蹄半只、干雪豆250g、姜2片、料酒、香醋、鹽

      1.豬蹄、雪豆備好(豬蹄買來已經(jīng)剁塊,收拾干凈的)。

      2.豬蹄洗凈,放入煮鍋里加入適量的清水,再放入姜片和料酒。3.大火煮開后繼續(xù)煮五分鐘,煮出血沫。

      4.豬蹄撈出用清水洗血沫,再次檢查一遍,拔去細小的毫毛。5.將雪豆洗凈,加入適量清水隔夜浸泡,清洗瀝干水份待用。

      6.把焯過水的豬蹄、泡發(fā)好的雪豆和姜片放入湯煲內(nèi)加入適量清水,7.再放入一湯匙香醋(有利于骨頭中的鈣質(zhì)稀出到湯中)。

      8.燒開以后保持大火狀態(tài)燒20分鐘,打去表層的浮沫,直到湯汁發(fā)白,然后轉(zhuǎn)小火煲約3小時。

      9.至豬蹄酥爛,放入鹽調(diào)味,撒上蔥花裝飾,可根據(jù)自己的口味調(diào)蘸水(用醬油、醋、香油、辣椒油、花椒粉、蔥花調(diào)成蘸水)

      豌豆黃

      材料:豌豆250g、白糖50g、黃油

      1.去皮豌豆加二倍的水浸泡一夜

      2.泡好的豌豆放入容器隔水蒸30分鐘左右 3.蒸好后的豆子用手輕輕一捻就會變成粉末狀

      4.把蒸好的豆子放入料理機加少量水打成非常細膩的泥狀 5.打好的豆泥倒入鍋中,加入白糖

      6.小火不停翻炒至出現(xiàn)明顯紋路,且紋路不易消失 7.取一個保鮮盒,里面涂薄薄的一層黃油 8.倒入炒好的豆泥,輕摔幾下使豆泥平整 9.蓋好盒蓋,入冰箱冷藏幾小時 10.取出倒扣切塊即可

      糯米桂花藕

      材料:糯米、藕、紅糖、紅棗、冰糖、糖桂花 1.先將糯米用水浸泡1至2個小時

      2.糯米泡好后,開始準(zhǔn)備藕,把藕皮削掉清洗干凈,一端切開一個蓋子 3.用筷子把糯米填到藕里,糯米要塞滿壓實 4.用牙簽把切下來的藕蓋子封口固定

      5.把藕放到電飯鍋里,加水沒過藕身,放入適量冰糖(或紅糖),再放幾粒紅棗,可以上色味道也更好,大約煮2個小時左右就可以了

      6.糯米藕煮好后,在鍋里多浸泡一會,等湯晾涼了再撈出 7.切片擺盤,將糖桂花淋在糯米藕上

      玫瑰花餅

      材料:低筋面粉125克、黃油60克、雞蛋25克、糖粉20克、玫瑰花瓣適量

      1.黃油室內(nèi)軟化,用打蛋器簡單攪拌。

      2.糖粉分三次加入黃油中,并將黃油打發(fā)略成白色。

      3.蛋液分三次加入略成白色的黃油中,每加入一次要攪拌均勻再加入第二次。4.低筋面粉過篩,倒入黃油中,拌入玫瑰花瓣,和成面團,不要揉過度。5.面團分成10克一個的圓球,放入不粘烤盤中,用叉子將面團按扁。6.烤箱預(yù)熱180°,20分鐘即可。

      白切豬肝

      材料:豬肝、料酒、蒜蓉、生抽、白糖、香油

      1.豬肝在流動的水下反復(fù)沖洗干凈,入鍋,放水沒過豬肝

      2.放一湯匙料酒,中火煮開后,撇去浮沫,轉(zhuǎn)小火慢煮40分鐘

      3.關(guān)火開蓋,等豬肝涼后,把豬肝從湯水中取出,用快刀切成薄片,擺盤 4.用蒜茸,生抽,白糖和香油調(diào)成味汁,吃的時候蘸味汁食用 5.煮豬肝時要用小火慢煮,大火容易把豬肝煮出很多大的空洞

      珍珠丸子

      材料:豬肉、糯米、雞蛋清、料酒、油、生抽、鹽、香蔥

      1.糯米提前用冷水浸泡5小時以上,浸泡好的糯米裝菜籃中瀝干水份

      2.在肉餡中先加入料酒調(diào)拌均勻,然后加入雞蛋清順著一個方向拌均勻,等雞蛋清與肉餡完全混合后,加入生抽、鹽、油攪拌均勻

      3.用勺子將調(diào)好的肉餡做成一個個丸子形狀,然后放入裝有糯米的籃子中 4.將丸子全方位滾上一層糯米

      5.拿起滾好糯米的丸子,放手掌心中來回晃動,直至滾圓,做好的丸子放蒸鍋隔層上 6.所有丸子做好后,蒸鍋上燒水,水燒開后,放上蒸隔層,蒸25分鐘即可 7.丸子熟后,散點香蔥,出鍋。

      烤羊排

      材料:羊排、醬油、料酒、蔥、姜、孜然、辣椒、生菜

      1.倒入醬油、料酒等腌制羊排,不用放鹽啦,用刷子涂抹均勻,最好再放上蔥姜,腌好后放冰箱里腌十個小時。

      2.腌好后。撒上孜然和辣椒,用錫紙包好。3.放在烤盤里開始,200度,1小時。

      4.1小時后,打開錫紙,在放進去烤20分鐘,配上生菜葉子就ok了。

      粉蒸排骨

      材料:糯米、大米、排骨、料酒、白胡椒粉、花椒、郫縣豆醬、老抽、生抽、豆腐乳、土豆

      1.圓糯米、大米,1:1的比例,小火炒至微黃離火,等米冷涼以后用攪拌機打磨成粉。2.肋排一斤,洗凈后用料酒、白胡椒粉、花椒粒腌制15分鐘。

      3.接著用郫縣豆瓣一勺、老抽一勺、生抽一勺、豆腐乳汁一勺、食用油一勺拌勻排骨腌制一個小時。

      4.把花椒粒挑出來后,加入蔥姜蒜末,再一點一點加入米粉(如果有稱的話每樣米各60g就不用一點一點加入了)混合均勻。5.竹屜下碼放厚土豆片或者南瓜都行,再上層碼上腌制好的排骨,大火蒸15分鐘后改成中火再蒸一個小時,鍋底的水一定要放夠哦
