      簡要安化黑茶知識

      一、什么是安化黑茶?

      從原料基礎(chǔ)、加工工藝、品質(zhì)特征幾個因素考慮。

      它是采用安化境內(nèi)山區(qū)大中葉種群體品種為原料,經(jīng)過殺青、初揉、渥堆、復(fù)揉、松柴明火干燥等五大工藝加工而成的具有干茶色澤黑褐油潤、滋味醇和或微澀、湯色紅明鮮亮,略帶獨特松香味的黑毛茶和以其為原料蒸壓成形的緊壓茶的總和。其中渥堆和松柴明火干燥是形成安化黑茶成品的兩大核心工藝。

      二、安化黑茶的誕生

      公元1524年,中國歷史上最早出現(xiàn)有“黑茶”的文字記載(商茶低偽、悉征黑 茶)”1524年之前所稱的四川烏茶不是真正的黑茶,它是將鮮葉蒸青成綠茶,改變形狀成餅茶(團(tuán)塊綠茶);湖南是中國黑茶的起源地,主要產(chǎn)區(qū)為安化和臨湘。后來慢慢遍及益陽、桃源、寧鄉(xiāng)等地;安化黑茶之崛起于世,得利于礦日持久的“茶馬交易”,它是安化黑茶的主要傳播媒介與貿(mào)易營銷渠道。茶馬交易:最初見于唐代,到宋初,建立“茶馬司”部門,才成定制。

      三、安化黑茶的地位確定

      1524年前后,安化黑茶屬于私茶,不能邊銷。到1595年,黑茶被朝廷正式定“官茶”。1524—1595西北茶商越境來安化運黑茶比較頻繁。御史李楠上報朝廷,后經(jīng)戶部批示,從此西北官引茶以四川、漢中茶為主,湖南黑茶為輔。邊銷茶又稱“官茶”系由政府控制用于與邊疆少數(shù)民族交換馬匹之茶。

      四、安化黑茶的特征

      安化黑茶是中國六大茶類(綠、黃、白、青、紅、黑)中較為特殊的一大茶類。其原因是:一是歷史悠久。二是原料特殊。大多數(shù)黑茶產(chǎn)品所采用的原料均為成熟度較高的鮮葉,毛茶枝葉粗大,并具有一定比例的含梗量。三是工藝復(fù)雜。黑茶加工從原料到成品一般要經(jīng)過二十多道甚至三十多道工序才能完成。四是品味獨特。成品不苦不澀,口感甜純潤滑。湯色紅艷明凈。品味黑茶,在視覺和口感上是一種極美的享受。五是耐陳列,具有收藏增值的特性。六是功效獨特。

      五、安化黑茶產(chǎn)品的開發(fā)

      1、三尖

      清乾隆年間,安化茶葉生產(chǎn)商應(yīng)山西茶葉商的要求,采接細(xì)嫩芽葉、精細(xì)加工制成高級黑茶:天、貢、生。供西北邊區(qū)中上層人士需要。清道光年間,天、貢尖被定為“貢茶”,供皇室貴族飲用。

      2、花卷茶

      清道光元年(1820年),安化發(fā)明了“筒子茶”,又叫“花卷茶”,每支重100兩(老稱),稱“安化百兩茶”,又稱“道光安化百兩茶。清同治年間(1862年—1874年)山西茶商與安化邊江劉姓兄弟在“百兩茶”的基礎(chǔ)上共同研制安化千兩茶,增重為每支1000兩(老稱),制成花卷茶,別名“安化千兩茶”,又稱“同治安化千兩茶”。1952年,白沙溪茶廠聘請劉姓家庭千兩茶傳人入廠,規(guī)模化生產(chǎn)安化千兩茶。1958年,白沙溪茶廠改用機(jī)壓花磚茶。1958年—1983年,沒有一支安化千兩茶的生產(chǎn)。1983年,白沙溪為恢復(fù)傳統(tǒng)安化黑茶產(chǎn)品—千兩茶,重新生產(chǎn)。1998年,白沙溪申請了千兩茶的國家專利。

      3、黑磚茶

      它最初稱“黑茶磚”。1939年5月,白沙溪創(chuàng)始人—彭先澤在安化試壓成功,1940年開始在湖南省磚茶廠機(jī)械規(guī)?;a(chǎn)。

      4、茯磚茶

      1644前后,陜西涇陽采用安化黑毛茶為原料,手制伏磚。稱為“涇陽磚”,當(dāng)?shù)厝擞纸小昂琛?,需在伏天制作,故稱“天伏茶”。以其藥效似土茯苓,就由“茯茶”或“福磚“。1953年,白沙溪茶廠在安化手制而成了第一片“茯磚茶”。打破了茯磚茶只能在陜西涇陽壓制的神話。

      5、花磚茶

      由于制作花卷茶操作繁雜,勞動強度大,季節(jié)性強,為提高生產(chǎn)效率,1958年白沙溪茶廠試用機(jī)械壓制“花磚茶”。
