      黑茶茶藝

      各位評委老師,大家好,我叫高琪,今天我為大家表演的是茯茶茶藝。茯磚茶以優(yōu)質(zhì)黑毛茶為原料經(jīng)過壓制、發(fā)花等工序精心制作而成。特殊的工藝造就了茯磚茶獨有的品質(zhì),讓我們靜下心來感受這承載中華茶文化厚重歷史、并體驗茶葉神奇功效的伏茶魅力吧。

      第一道:擺盞迎客

      今天所選用的是紫砂壺(用來泡茶)、公道杯(用來均勻茶湯)、品茗杯(品飲茶湯),這樣有利于沖泡茯磚茶特有的菌花香來。

      (備注:所有茶具離開茶船都要沾一下茶巾,右手拿茶具注意手勢,左手蘭花指,從右至左劃一圈展示給客人看)

      第二道:初探金花

      即賞茶。今天為大家準備的是產(chǎn)于益陽茶廠的優(yōu)質(zhì)茯磚茶,金光閃閃又似米蘭搖曳,聞之具有獨特的菌花香或中草藥香。

      (備注:左手拿茶荷大口方向,放下時兩手一起放下)

      第三道:水火交融

      即煮水。今天我們選用的是不含任何雜質(zhì)的純凈水。品飲黑茶用水溫須達到100攝氏度,茶的內(nèi)含成分才能得以充分浸出。

      第四道:溫壺燙盞

      即洗器。將茶具用沸水再進行沖洗一次,使壺身溫熱,也可使茶葉的色香味本質(zhì)隨著溫度而適宜的表現(xiàn)出來。(備注:紫砂壺壺蓋置于茶壺左上方,沸水注入紫砂壺、公道杯中,公道杯里面的水從右至左倒入品茗杯中,再將公道杯豎起來倒掉剩余的水,保持肩膀平直)

      第五道:黑龍入壇(茯磚入宮)

      即投茶。將茯磚茶投入紫砂壺內(nèi),即稱之為茯磚入宮。

      (備注:左手拿茶導交給右手,左手再拿茶荷,撥三次茶葉,左手放下茶荷,右手把茶導交給左手,左手再把茶導放入茶道組里面,左邊的物品左手拿)

      第六道:金花沐浴

      即洗茶。伏茶經(jīng)過緊壓茶身有一定的緊密度,需要通過洗茶溫潤才能使茶葉充分舒展,茶汁才能浸出。此過程恰似美麗的金花洗去一路風塵,漸漸現(xiàn)出本來的姿容。

      (備注:茶水沿著壺內(nèi)側(cè)逆時針方向倒一圈,把水倒出來時順時針方向)

      第七道:懸壺問鼎

      即茶之沖泡。熱水從壺中直瀉而下,充分激蕩茶底,茶葉像一條條蛟龍在壺中上下翻滾。

      第八道:藏龍臥虎

      即悶茶。我們需等待一至兩分鐘,所以我們可以利用這段時間洗小茶杯。沖泡時間太短,色香味不能顯示,但陳年茯磚因內(nèi)含成分已被氧化和分解,茶汁極易浸出,故泡茶時間不能太長。

      (備注:從右至左倒掉品茗杯中的水)

      第九道:琥珀流光

      即斟茶。一壺好的黑茶泡好了,茶湯如琥珀流光,美不勝收。

      (備注:從右至左倒入品茗杯,倒完一杯轉(zhuǎn)一下公道杯,打個逗號)第十道:甘甜與共

      即奉茶。將沏好的茶湯均勻分到品茗杯中,甘甜的黑茶預(yù)示著今日生活的美好,借此道程序寓意中華民族大家庭永遠和睦相處,幸福與共。

      (備注:品茗杯放在托盤中呈三角形擺放,切記不能擺成一條直線,奉茶從右至左,將最右邊的茶給最右邊的客人,依次,切記不能先中間后兩邊,奉茶禮儀舉案齊眉,左手拖茶盤底部,將品茗杯放入托盤中時,托盤不能放在茶船上,應(yīng)左手拖住茶盤底部)

      第十一道:玉液瓊漿

      即品茶。歷經(jīng)滄桑的伏茶在洗盡凡塵后,真是再現(xiàn)其華麗而不失端莊的大家風范(備注:喝一口,記住請的姿勢)。湯如琥珀,晶瑩剔透,寧靜厚重,醇化圓潤,香氣純正而深沉(備注:喝一口,請的姿勢,第二圈要劃一圈),處處彰顯歷史的沉淀之感,回味雋永(備注:喝一口,請的姿勢)。

      第十二道:古道回味

      即收杯謝客。茯磚茶承載歷史,承載健康。宛如古道中走來的黑美人,內(nèi)斂而深邃,沉靜而悠遠,“飲罷方舟去,茶煙裊細香。”愿悠悠茶香帶給你一份寧靜,一份祥和,一份安康。

      綠茶茶藝

      各位評委老師,大家好,我叫高琪,今天我為大家表演的是綠茶茶藝,請大家靜下心來與我共享茶藝的溫馨與愉悅。

      第一道:焚香除妄念

      俗話說:“泡茶可以修身養(yǎng)性,品茶如品味人生,”古今品茶都有講究平心靜如氣?!胺傧愠睢奔赐ㄟ^點燃這支香來營造一個祥和肅穆的氣憤,并達到驅(qū)除妄念、心平氣和的目的。

      第二道:冰心去凡塵

      茶是至清至潔,天涵地育的靈物,泡茶要求所用的器皿也必須至清至潔,我們現(xiàn)在把干凈的玻璃杯再燙洗一遍。

      (備注:水杯倒入1/3的水,逆時針轉(zhuǎn)三圈,右手握住杯口1/3處,左手蘭花指,倒水時右手握杯,左手轉(zhuǎn)杯三圈,從外往內(nèi)轉(zhuǎn),邊轉(zhuǎn)邊倒水,雙肩打開不要加緊)

      第三道:玉壺養(yǎng)太和

      我們將要沖泡的綠茶屬于芽茶類,因芽茶極細嫩,若直接用開水沖泡,會影響茶湯的色、香、味,并破壞茶葉的維生素,所以泡龍井茶、碧螺春等高級綠茶只能用80-85度的開水,為了使泡茶的水溫不溫不火恰到好處,在我們泡茶之前要把壺蓋打開,將水涼至80-85度,這稱之為“玉壺養(yǎng)太和”。

      (備注:給一個手勢給隨手泡,打開壺蓋涼水)

      第四道:清宮迎佳人

      蘇東坡有詩云:“戲作小詩君勿笑,從來佳茗似佳人?!鼻鍖m迎佳人即用茶導把茶葉投入玻璃杯中。(備注:左手拿茶導,右手輔助順時針轉(zhuǎn)一圈)

      第五道:甘露潤蓮心

      好的綠茶如蓮心,在開泡之前先用開水溫一下,這就稱為“甘露潤蓮心?!?/p>

      (備注:關(guān)上壺蓋,倒入1/3杯水)

      第六道:鳳凰三點頭

      綠茶在沖泡之前也講究高沖水,在泡茶時茶壺三起三落,好似鳳凰向各位在點頭致敬。

      (備注:沖水時沖在水杯內(nèi)壁,前后方向拉三次,雙肩打開,不要夾著肩膀)

      第七道:碧玉沉清江

      綠茶的茶芽在開泡后逐漸沉入杯底,這稱之為“碧玉沉江底”。

      (備注:右手蘭花指從左至右展示一下)

      第八道:觀音捧玉瓶

      佛教故事中傳說觀音菩薩常捧著一個白玉凈瓶,凈瓶中的甘露可以消災(zāi)祛病,救苦救難。觀音捧玉瓶即由我將泡好的茶獻給客人。

      第九道:春波戰(zhàn)旗槍

      杯中溫暖的水如春波蕩漾,在溫水的浸泡下茶葉慢慢舒展開,尖尖的葉芽如槍(備注:雙手端杯至右邊停一下),展開的嫩葉如旗(備注:左邊停一下),在品茗之前先觀察欣賞,在青碧澄凈的茶水中,千姿百態(tài)的茶芽隨波晃動(備注:順時針搖晃水杯),好像有生命的綠精靈在舞蹈,十分賞心悅目。

      第十道:慧心悟茶香

      品綠茶與品烏龍茶龍井茶一樣要一看、二聞、三品味,所不同的是綠茶的想起更加清幽、淡雅,要用心靈與感悟(備注:給一個請的姿勢,聞一次,轉(zhuǎn)一圈),才能聞得出綠茶哪種春天的氣息,以及清純淡雅,難以言傳的生命之香(備注:請,聞一次)

      第十一道:淡中品致味

      綠茶的茶湯清純甘甜,淡而有味(備注:請,喝一口),綠茶雖然不像紅茶那樣濃艷醇厚,也不像烏龍茶那樣 巖韻醉人(備注:轉(zhuǎn)一圈,請,喝第二口),但茶圣陸羽認為“茶性儉”,只要是有心人,一定能從淡淡的綠茶茶湯中品出天地間至清至純、至臻至美的韻味來(備注:請,喝第三口)。

      茶具的擺放

      品茗杯花紋方向朝向客人,杯子數(shù)量多可擺成圓形,三個可擺成三角形,四個可擺成直線或者圓弧形。隨手泡壺嘴方向朝茶船方向,茶壺置于茶船右中位置,公道杯置于茶船左中位置,茶巾疊被子的方式折放于茶船中間下方位置,開口方向朝自己。

      中國茶藝

      項目意義:不論是茶道還是茶藝。最根本的兩個基礎(chǔ)是“茶”和“藝”,故稱茶藝。物質(zhì)與精神兩個方面是茶藝的根本。茶就是科學泡茶,科學飲茶,使人們充分吸收茶葉的營養(yǎng)保健物質(zhì)達到強身健體。藝就是把泡茶飲茶藝術(shù)化、人輕松愉快,達到精神上的養(yǎng)生。

      適合人群:所有人群(最適宜成年以上)

      簡介:中國的民族性,自然謙和,不重形式。所以不管是唐代的茶經(jīng),宋代的大觀論茶,或明代的茶疏,文中所談僅是通論,一般人民將飲茶融成生活一部份,沒有什么儀式,沒有任何宗教色彩,茶是生活必需品,高興怎么喝,就怎么喝。飲茶所講究的是情趣,如「披詠疲倦」、「夜深共語」、「小橋畫舫」、「小院焚香」,都是品茗的最佳環(huán)境和時機,「寒夜客來茶當酒」的境界,不但表露出賓主之間的和諧歡愉,而且蘊蓄著一種高雅的情致。

      《四君子茶藝》

      “四君子茶藝”由潁溪茶童吳冠軍先生創(chuàng)作于1998年,此套茶藝程式結(jié)束了“茶藝”只能在臺上演繹而難以真正走入百姓生活的歷史,從而開啟“家庭茶藝”之先河,其內(nèi)容融藝術(shù)性與實用性為一體,少缺了演藝型茶藝中的矯柔造作而更注重于實用。整套茶藝流程簡潔明快,寓意深刻,尤其適合三、五好友共享佳茗時使用,并適用于泡飲各種名茶,故深受茶藝愛好者推崇,在家庭茶事中被廣為應(yīng)用。

      一、相聚是緣,恭候光臨

      將清洗好的茶具布設(shè)于臺面,寓意主人全體家庭成員喜迎嘉賓。

      二、活火煮泉,恭請上座

      開啟電茶爐煮沸泉水,并將品茗杯翻轉(zhuǎn)置放于泡茶基座之上,寓意恭請客人入席就座,待品佳茗。

      三、高山流水,滌盡凡塵

      將泉水注入紫砂壺,然后依次倒入品茗杯,起溫壺燙杯作用,寓意為遠道而來的客人洗去一路風塵。

      四、葉嘉共賞,游龍歸宮

      為客人展示即將品飲的茶葉,并介紹相關(guān)茶葉知識與此茶的出處,并取適量茶葉投入紫砂壺。

      五、興旺發(fā)達,步步升高

      以懸壺高沖之手法注水入壺擊打茶葉,使泡沫溢出壺口起醒茶作用,四溢的泡沫象征祝愿來賓在事業(yè)與生活上興旺發(fā)達、步步高升!

      六、遠離塵囂,分承香露

      將燙好的品茗杯從泡茶基座移至茶托上以備斟茶之用,寓意讓我們暫且遠離都市的喧囂,在這目映奇石幽蘭、耳繞絲竹禪音的佳境里,來共同分享佳茗的幽香。

      七、憶苦思甜,情深意濃

      高濃度的茶湯入口濃烈,但回味甘甜綿長,會讓主賓共同憶起往昔同甘共苦的患難歲月,并更加珍惜今天的美好時光。談笑間,更進一步加深了友人之間的感情。八、九九歸一,地久天長

      主人以“關(guān)公巡城”手法分九次為三位客人斟滿品茗杯,然后以“懸壺高沖”手法一次注滿自己的杯子,寓意此次品茗活動即將結(jié)束。九九歸一,有相聚之際必有離別之時,但我們的友誼定會地久天長。

      九、盡杯謝茶,一路順風

      主賓同時舉杯,將佳茗一飲而盡,既寓意客人感謝主人以佳茗相待,亦寓意主人祝愿來賓歸途一路順風!

      茶葉文化

      廣義茶文化:物質(zhì)與精神財富的總和

      《神農(nóng)本草經(jīng)》:神農(nóng)嘗百草,日遇七十二毒,得荼而解之。

      王褒的《僮約》:武陽買茶,烹茶盡具。西漢時期,最早談到茶具概念。

      陸羽的《茶經(jīng)》,是世界上第一部關(guān)于茶的書

      其水,用山水上,江水中,井水下。其山水,揀乳泉、石池慢流者上。

      飲茶方式

      茶粥:即擂茶,把茶葉和其他各種材料放入擂缽中搗碎,沖水飲之。

      唐代:煮茶,唐末出現(xiàn)斗茶。工序:炙茶、碾末、羅茶、煎茶、酌茶

      宋代:斗茶盛行宋代茶葉分為團餅茶和散茶。貢茶主要產(chǎn)于福建建安,又名北苑,稱為北苑貢茶。宋徽宗趙佶《大觀茶論》

      清代:撮泡法,分有六大基本茶類:綠茶、紅茶、烏龍茶、白茶、黑茶,出現(xiàn)烏龍功夫茶品飲藝術(shù) 茶葉

      茶樹:性喜溫暖、濕潤。栽培:無性生殖能夠保持茶樹的性狀和特性。

      茶多酚:(氧化 發(fā)酵)茶紅素、茶黃素

      綠茶

      不發(fā)酵茶,具有栗香、清香。扁炒青:扁平光滑,制法不同,品質(zhì)特征也有差異。

      烏龍茶(青茶)

      半發(fā)酵茶,具有花香。

      閩北、閩南、潮汕、臺灣四個產(chǎn)區(qū)

      臺灣包種茶:蘭花清香。茶葉呈深綠或青褐色,茶湯呈密綠或密黃

      紅茶

      全發(fā)酵茶,具有花果香、甜香,滋味醇和茶湯呈朱紅色

      茶紅(褐)素:使茶湯發(fā)暗,葉底暗褐。

      黑茶

      后發(fā)酵茶。普洱茶:湯色紅濃明亮,葉底褐紅,滋味醇厚回甘。

      茶葉感官

      紅、綠、黃、白毛茶審評杯碗:高58mm,容量為200ml

      烏龍茶杯呈倒鐘形,高52mm,容量為100ml。碗的容量為110ml。

      水的要求:無色透明,無沉淀物,無味無臭。

      評茶

      干評外形:嫩度、形狀、色澤(色度、均勻度、光澤度)、整碎度、凈度

      濕看內(nèi)質(zhì):湯色、香氣、滋味、葉底(老嫩、厚薄、色澤、均勻度)

      高檔茶:色澤較淺而鮮亮,油潤性好中低檔:色澤變深,油潤性變差陳茶滋味淡而不爽 干看春綠茶:色澤綠潤,茶葉肥壯重實,或有較多白毫

      干看春紅茶:色澤烏潤,茶葉肥壯重實,或有較多白毫

      濕看春綠茶:茶葉沖泡后下沉快,葉底柔軟厚實

      濕看夏綠茶:茶葉沖泡后,葉底薄而較硬

      濕看夏紅茶:對夾葉較多

      茶具

      原始社會是一具多用。明朝開始出現(xiàn)專用茶具:茶壺、杯、蓋碗。

      顧景洲:現(xiàn)代著名紫砂壺大師,壺藝泰斗

      唐:青瓷(浙江)白瓷(河北)

      宋:黑釉(福建)宋代:官窯、哥窯、汝窯、定窯、鈞窯

      明:紫砂(宜興)白瓷(景德鎮(zhèn))

      金屬茶具(錫):密閉性好,較好的防潮,避光性能好。

      龍泉哥窯的青瓷:瓷胎薄質(zhì),釉層飽滿,釉面顯現(xiàn)紋片,紋片形狀多樣。

      廣彩:在瓷器上施金加彩,宛如千絲萬縷的金絲彩線交織,顯示金碧輝煌,雍容華貴的氣度 宜興紫砂壺:泥色多變,耐人尋味,壺經(jīng)久用,反而光澤美觀

      特點:泡茶不走味,貯茶不變色,盛暑不易餿

      景德鎮(zhèn)白瓷:薄如紙,白如玉,明如鏡。

      蓋碗(三才碗):蘊含天蓋之,地載之,人育之。

      品茗和用水

      現(xiàn)在五大名泉:鎮(zhèn)江中冷泉、無錫惠山泉、蘇州觀音泉、杭州虎跑泉、濟南趵突泉

      軟水:鈣、鎂離子<8mg/l

      硬水主要成分:碳酸鈣和碳酸氫鎂,一經(jīng)高溫煮沸變成軟水。

      含鐵質(zhì)不能用,茶多酚與鐵離子結(jié)合,使茶湯顏色變深。

      鈣含量>2ⅹ10-6時,茶味變澀。通常泡茶用水總硬度不超過25°G渾濁度<5°PH值<5 雪水:湯色明亮,香味具佳井水:易受污染,使湯色變淡,湯味帶咸

      自來水:氯化處理過的,使茶湯香氣變淡

      茶藝規(guī)范和禮儀

      人員:文化素質(zhì)、茶葉知識、泡茶技巧、儀容儀表服飾:端莊、大方、整潔

      行茶程序:準備階段、操作階段、完成階段工作三輕:說話輕、操作輕、走路輕

      茶藝館:環(huán)境準備、用具準備、人員準備環(huán)境:幽、靜、雅、潔

      管理重點:貨源管理、人才管理、內(nèi)部管理茶藝三種形態(tài):品茗、營業(yè)、表演

      泡茶技法

      泡茶三要素:茶水比例、水溫、浸泡時間

      煮水環(huán)節(jié)講究不同茶葉品種所需水溫不同

      綠茶1:5080oC時間不宜過久,容易悶黃泡熟

      紅茶1:6090oC

      烏龍茶1:2295oC以上

      普洱茶、緊壓茶1:20100oC

      茶具選擇

      一杯好茶需要掌握:選茶、擇水、備器、沖泡、品嘗

      茉莉花茶:蓋碗烏龍茶:紫砂茶壺,重在啜。

      沏泡方法

      基本程序:備器、煮水、溫壺(杯)、置茶、沖泡、奉茶、收具

      溫壺(杯):提高溫度,清洗

      瓷壺主泡器:瓷壺、品茗杯、蓋置、杯托、茶船

      蓋碗主泡器:蓋碗、茶船

      福建功夫茶

      程序:備具、潔具、賞茶、置茶、溫潤跑、正式?jīng)_泡、淋壺、洗杯、斟茶、奉茶(斟茶時,杯中茶湯七八成滿為宜)

      器具:紫砂小壺、品茗杯、茶船、燒水爐具、茶葉罐、茶荷、茶夾、茶則、茶匙、茶巾、水盂

      烏龍茶

      先觀其湯,再聞其香,后品其味,三口見底

      潮汕烏龍茶 主泡器:茶船、壺承、紫砂壺、蓋置、壺墊、茶海、聞香杯、品茗杯、杯托

      臺灣烏龍:清香型。

      程序:備具、溫壺燙盞、賞茶、置茶、溫潤泡、正式?jīng)_泡、刮沫、淋壺、洗杯、濾茶、斟茶、奉茶、品茶溫壺燙盞:將開水注入紫砂壺和公道杯

      公道杯主要用來中和茶湯

      聞香杯在左,品茗杯在右

      唯獨需要聞香杯:將其中茶湯旋轉(zhuǎn)倒入品杯,嗅聞香杯的熱香。

      白茶:

      主泡器:玻璃杯、杯托、茶葉罐、茶匙、賞茶杯、燒水爐具,一般為七八成滿

      黃茶:

      玻璃杯、杯托、杯蓋、賞茶盤、茶葉缸、茶匙、燒水爐具

      君山銀針:賞景為主的特種茶沖泡大約10分鐘后可以飲用

      黑茶:

      茶盤、蓋碗、公道壺、小品杯、茶葉罐、茶則、茶針、茶巾、燒水爐具

      將水沖入蓋碗,洗滌后,將茶水從斜置的蓋碗和碗沿的間隙中倒出

      花茶:三分鐘后,向內(nèi)翻轉(zhuǎn)碗蓋,聞其香,適宜更年期女性飲

      科學飲茶

      基本要求:

      正確選擇茶葉、沖泡方法和品飲

      茶多酚:殺菌抗病毒、抗氧化、除臭、抑制動脈硬化、抗輻射、降血脂

      咖啡堿:興奮、強心、利尿、減肥

      維生素E:抗氧化、延緩衰老

      不同季節(jié)飲茶

      春季:綠茶

      夏季:綠茶中加白菊花、金銀花等,清涼解暑,冰紅茶

      秋季:烏龍茶
