什么是國(guó)宴?
國(guó)宴是xx或國(guó)務(wù)院總理為外國(guó)元首、政府首腦來訪而舉行的正式宴會(huì)。國(guó)賓來訪的另一個(gè)重要禮儀活動(dòng)就是擺國(guó)宴。
國(guó)宴的隆重就在于一個(gè)“國(guó)”字,以國(guó)家名義招待外國(guó)貴賓,處處體現(xiàn)國(guó)家形象,因而是最高規(guī)格的宴請(qǐng)形式,如宴會(huì)廳內(nèi)正面懸掛國(guó)旗,演奏國(guó)歌,國(guó)宴請(qǐng)柬、菜單、座位卡、席間樂的曲目單,甚至所使用的餐具上均飾有國(guó)徽?qǐng)D案等。
國(guó)宴的隆重,也可從出席者的服飾上看出來。出席國(guó)宴的人員均著正式服裝。西方時(shí)興穿大禮服,男士身穿黑色燕尾服,扎領(lǐng)結(jié);女士則穿露背長(zhǎng)裙,1986年英國(guó)女王訪華歡迎宴會(huì),英方男女客
人就是那樣。而我方人員出席國(guó)宴時(shí),男士一般穿深色西服或中山裝,而女士多穿中式上衣配長(zhǎng)裙或旗袍。
國(guó)宴規(guī)模、席位
過去,歡迎國(guó)賓的宴會(huì)在人民大會(huì)堂二層的大宴會(huì)廳舉行。自上世紀(jì)80年代后期起,改在人民大會(huì)堂一層的西大廳舉行(中外雙方在東大廳進(jìn)行正式會(huì)談之后,即在西大廳出席宴會(huì),非常方便)?,F(xiàn)在西大廳的國(guó)宴一般是十來桌。
主桌上除我方領(lǐng)導(dǎo)人、國(guó)賓外,一般安排雙方正部長(zhǎng)級(jí)以上的人員以及雙方的大使就座,其余各桌按身份高低,依次排列。各桌的主人面朝同一方向,每桌的主要客人座位在主人右手邊,翻譯則在主要客人的右手邊。
國(guó)宴的程序
國(guó)宴一般是晚7時(shí)開始,時(shí)間不超過1小時(shí)15分鐘。賓主雙方的陪同人員先入席等待,待宴會(huì)開始時(shí),國(guó)賓和配偶在我方領(lǐng)導(dǎo)人陪同下步入宴會(huì)廳,這時(shí)軍樂隊(duì)奏歡迎曲。宴會(huì)進(jìn)行中間,席間樂一曲接一曲,都是中國(guó)和來訪國(guó)著名的樂曲。宴會(huì)結(jié)束后,國(guó)賓在我方領(lǐng)導(dǎo)人陪同下,走向樂隊(duì),向樂隊(duì)致謝。最后,國(guó)賓在我方領(lǐng)導(dǎo)人陪同下步出宴會(huì)廳,至北大廳中央握手告別。
原來,國(guó)宴上主人和客人講話,一般是安排在熱菜之后或宴會(huì)開始時(shí)。主人講話后,演奏客方國(guó)歌;客人講話后,奏主方國(guó)歌。1990年7月1日起,我國(guó)國(guó)宴上取消了講話做法,于是奏國(guó)歌的時(shí)間便放在宴會(huì)開始時(shí),即當(dāng)我方領(lǐng)導(dǎo)人陪同國(guó)賓到達(dá)宴會(huì)廳主桌座位時(shí),先在座位前站立,待奏完雙方國(guó)歌后再落座。先奏客方國(guó)歌,后奏主方國(guó)歌。演奏兩國(guó)國(guó)歌時(shí),全體肅立,停止走動(dòng)和交談(攝影記者除外)。而自XX年起,國(guó)宴上不再演奏國(guó)歌,因?yàn)閲?guó)宴往往是在歡迎儀式后舉行,歡迎儀式上已經(jīng)奏過國(guó)歌,時(shí)間不長(zhǎng)再奏國(guó)歌,顯得有些重復(fù),故而減少了一次。
國(guó)宴的禮儀與服務(wù)
國(guó)宴上,男服務(wù)員身穿黑色西服,扎領(lǐng)結(jié);女服務(wù)員身穿美觀、高雅的旗袍。他們上菜斟酒動(dòng)作嫻熟,服務(wù)周到、熱情。
入座后,服務(wù)員隨即為每位客人擺好葷素搭配的冷盤,吃過冷盤后上湯(這是西餐習(xí)慣,與中餐不同),然后是上葷菜、素菜。第一道菜往往是該宴會(huì)的代表菜,最為名貴。熱菜一般是三葷一素(現(xiàn)在一般是2-3道菜),依次端上,即待賓客吃完一道菜后,換上新餐盤,再由服務(wù)員及時(shí)端上另一道菜。主菜后是甜點(diǎn)、水果。
國(guó)宴用酒,過去主要以茅臺(tái)為主,自1988年10月,國(guó)宴停止使用茅臺(tái)酒等一切烈性酒。青島嶗山的礦泉水、青島啤酒、五星啤酒,由于出口量比較大等原因,如今在國(guó)宴上很少能見得到了。新一代的北京啤酒、天津干白葡萄酒、可口可樂、燕京啤酒、橙寶、王朝葡萄酒、椰子汁、碧云洞礦泉水、浙江龍井茶等,已成為國(guó)宴的主要飲品。
我國(guó)國(guó)宴常常采用中菜西吃的方法,即客人可以用刀叉吃中餐。餐桌上為每位客人同時(shí)擺好了中餐筷子和西餐刀叉,任由客人選用。餐具是特制的,有中國(guó)瓷器、陶器、金器、銀器、不銹鋼器、銅器等。瓷器、陶器有制作精美的象形餐具,如白菜形瓷盤、魚葉形瓷盤、牛(魚)形瓷盤、龜形瓷盤、柿形瓷缸、橘形瓷盅、雞形陶罐、鴨形陶缸、海螺、蘋果形碗等。酒具為玻璃、水晶等制品。

國(guó)宴是什么樣兒?生猛的山珍海味?魚翅鮑魚?還是傳說中的“滿漢全席”?其實(shí),國(guó)宴也沒那么雍容華貴,甚至可以說有點(diǎn)“樸實(shí)”。其實(shí),國(guó)宴的重點(diǎn)并不在吃上??
國(guó)宴“看人下菜碟兒”
國(guó)宴,顧名思義,是國(guó)家元首或政府為招待國(guó)賓、其他貴賓或在重要節(jié)日為招待各界人士而舉行的正式宴會(huì)。不過上菜前,先得弄清什么不能上。文化、宗教、民族信仰不同,各自對(duì)飲食的禁忌也不一樣。有道是“外交無小事”,調(diào)劑不好,就會(huì)在國(guó)際影響中留下“灰色檔案”。
比如魚翅,在中國(guó),大家都認(rèn)為這是道“貴菜”,餐桌上來一盤“倍有面兒”。但如果在歐洲貴族看來,吃魚翅“既不健康,又太不環(huán)?!薄4送?,外賓的胃口一般都比較大,吃完后餐盤都比較干凈。這就提醒我們?cè)跍?zhǔn)備國(guó)宴時(shí),一定留足“余量”。1976年,太平洋南部一個(gè)國(guó)家的代表團(tuán)前來訪華。當(dāng)晚的菜肴以“湯”為主,對(duì)這些外賓來說,就“吃不夠”了。原來,他們平時(shí)習(xí)慣于以淀粉含量大的面包果、芋頭等薯類為主食。晚上,該國(guó)元首副官不得已來到接待室,問能否再弄點(diǎn)芋頭、啤酒,他們“餓了”??
知道了這些注意事項(xiàng)后,再準(zhǔn)備起國(guó)宴就萬無一失了。就拿現(xiàn)在來說,一般都是按“三步走”的程序來籌備菜肴:首先,向主人了解賓客的情況;其次,征詢主人的意見;在正式下單、起菜前,征詢客人的意見,等待他的確認(rèn)。對(duì)有忌口的客人,有針對(duì)性地予以調(diào)配菜單,蔥、姜、蒜這類刺激性調(diào)料,有選擇性地予以添加。當(dāng)然,對(duì)于那些身體有特殊癥狀的客人,如高血壓、高血糖、中風(fēng)患者,在配餐上也力求營(yíng)養(yǎng)有效。
此外,在國(guó)宴的準(zhǔn)備上,還有一個(gè)不成文的做法:給貴賓創(chuàng)造“故地重游”的感覺。一國(guó)元首再次訪華時(shí),往往會(huì)驚喜地發(fā)現(xiàn),上次他喜歡吃的菜肴又一次出現(xiàn)在菜譜中;他上次用過的餐具、上次赴宴時(shí)的布置,會(huì)再次“重放”。他在家鄉(xiāng)愛吃的食品,如漢堡之類,也會(huì)“原味”復(fù)制,這無疑增加了外賓們的印象分。
菜譜特別在哪里?
從以上的描述可以看出,國(guó)宴的菜式其實(shí)也并不特別:水晶蝦凍、白斬雞、如意魚卷、牛排??貌似咱小老百姓也都“撮”得起。那么就奇怪了,既然是一個(gè)國(guó)家最高規(guī)格的宴席,它總得有點(diǎn)特別的吧?里邊究竟有什么講究?
拿來招待“大人物”的菜品,首先要絕對(duì)保證安全。所有的原料都來自固定的渠道,采用嚴(yán)格的標(biāo)準(zhǔn),如蔬菜都是有機(jī)蔬菜,不能添加任何化學(xué)肥料,避免有害物質(zhì)給客人造成損害。對(duì)原料的所用部位也有嚴(yán)格規(guī)定,比如“開水白菜”這道菜最早源自四川,在當(dāng)?shù)?,任何部位都可以入菜,白菜幫、白菜葉、白菜心??但用于國(guó)宴時(shí),只選取三寸半高、葉綠肉厚的,還要去掉菜幫留其三葉嫩心??匆幌鹿侥憔鸵荒苛巳涣耍阂环荨伴_水白菜”的原料=5棵白菜。
此外,同樣的品種,同樣是“雞鴨魚肉”,國(guó)宴的選材可是“王者無敵”,由各地精選而來:燕窩,非泰國(guó)的官燕不用;魚翅,不是南海產(chǎn)的一級(jí)群翅不上桌;金絲小棗,也只用樂陵產(chǎn)的;對(duì)蝦來自山東,龍蝦專挑福建的,鮑魚是大連的好,綿羊是張家口的鮮香??獨(dú)家指定,對(duì)口定做,圖的就是“國(guó)宴用品,美味無雙”。
別以為選對(duì)產(chǎn)地就萬事OK了。用行家的話來說,這“只等于成功了一半”,“出品”時(shí)機(jī)也非常關(guān)鍵。如鰣魚必須是端午節(jié)前后捕撈的,蘿卜須是霜降以后的??原料“千呼萬喚始出來”,成品自然卓爾不群響當(dāng)當(dāng)。
原料的問題解決了,接下來就是烹制了。特別值得一提的就是火候,那可真是“一明一滅見真章”,大火爆炒、文火慢燉、蠟火輕灼??看似細(xì)微的火苗差異,卻決定著迥異的味道。這就需要廚師反復(fù)地試驗(yàn)、總結(jié)。
如今,火上功夫更現(xiàn)代化了。如布什和里根總統(tǒng)都鐘愛的“佛跳墻”,以前至少得在火上熬上三天三夜。現(xiàn)在有了電氣化的烹飪器皿,新式的流程管理辦法,烹飪效率得到了很大提高。但國(guó)宴廚師精工細(xì)作的態(tài)度依然沒變:“一個(gè)星期是起碼的,包括泡發(fā)干貨、準(zhǔn)備基礎(chǔ)的調(diào)料等。菜在灶上至少也得呆個(gè)一天一夜。這是品質(zhì)的保證。這可一點(diǎn)兒也不敢怠慢,畢竟國(guó)宴的金字招牌可不能倒?!?/p>
菜名“土氣”方便翻譯
看到這兒,也許你又納悶了:國(guó)宴的內(nèi)在可謂“盡善盡美”,可菜名怎么那么“土”?還不如飯館里的菜名“炫”。這里邊也是有說道的。因?yàn)閲?guó)宴主要針對(duì)外賓,太過花哨的菜名,有時(shí)候會(huì)造成翻譯的難度,也會(huì)令客人摸不著頭腦,不如干脆直白點(diǎn)兒好,只有少數(shù)“引進(jìn)”的地方菜保留原名,如孔雀開屏、佛跳墻、富貴蟹鉗等等。

此后一直到1980年代中后期是第二個(gè)時(shí)期,在計(jì)劃經(jīng)濟(jì)體制下,我們?yōu)榘罱粐?guó)家的元首或者使團(tuán)提供餐飲服務(wù)。服務(wù)科在這個(gè)階段被移交。在這個(gè)時(shí)期的中后期,外事活動(dòng)明顯增多,豪華團(tuán)隊(duì)增多,接待組織工作積極方便許多。第三個(gè)階段是1990年代到21世紀(jì),在比較發(fā)達(dá)的市場(chǎng)經(jīng)濟(jì)下有大量的國(guó)家元首來訪,國(guó)宴也走入了更加豐富、開放和多元化的歷史時(shí)期。在第一個(gè)階段我受到的嚴(yán)格、正規(guī)的教育,以及當(dāng)時(shí)組織化軍事化的管理,培養(yǎng)了我一絲不茍、精益求精的工作態(tài)度,這是令我一生受益的財(cái)富。當(dāng)時(shí)對(duì)于服務(wù)科人員的遴選,要求政治可靠、表現(xiàn)積極?!爸赖牟徽f,不知道的不問?!碑?dāng)時(shí)的工作量不大,但學(xué)到的東西很多,為以后的開發(fā)和創(chuàng)新打下了基礎(chǔ)。曾經(jīng)到北京飯店、四川飯店等地方學(xué)習(xí)深造,很多傳統(tǒng)菜式的制作,高精尖菜式的制作,包括全套西餐的制作都進(jìn)行了深入的學(xué)習(xí)。
到了1990年代,我們?yōu)榈谌?wù),在這個(gè)時(shí)期也有很多國(guó)宴在舉行。從規(guī)格上說,國(guó)賓館主要是經(jīng)典的小范圍宴會(huì),可負(fù)責(zé)來訪嘉賓夫婦或者全家的一日三餐,這就需要全面了解他們的生活習(xí)慣和飲食要求。而大型宴會(huì)方面,應(yīng)該說是一個(gè)榜樣。國(guó)宴菜是國(guó)家或?yàn)檎写赓e,以及政府的名義外國(guó)援華人員,以及為國(guó)家做出突出貢獻(xiàn)人士的菜肴。國(guó)宴菜通常以淮揚(yáng)菜為基礎(chǔ),匯集了各地方菜系,整理、改良而成。以咸味為主要口味,川菜減少了刺激性調(diào)料如辣椒、花椒的使用,淮揚(yáng)菜減少了糖的食用,特點(diǎn)是清淡可口,軟爛嫩滑,能夠滿足國(guó)內(nèi)外大多來賓的要求。中國(guó)國(guó)宴一般在或國(guó)賓館舉辦,但共設(shè)宴5000人,故近年國(guó)宴菜也進(jìn)行了改革,以減少開支,菜單不超過三菜一湯,不上白酒。其中獅子頭、佛跳墻及三寶鴨等為國(guó)宴菜的代表菜。
宴會(huì)程序 :
當(dāng)賓客進(jìn)入宴會(huì)廳時(shí),樂隊(duì)奏歡迎曲。服務(wù)員應(yīng)站在主人座位右側(cè),面帶微笑,引請(qǐng)入席。賓客入場(chǎng)就緒,宴會(huì)正式開始。全場(chǎng)起立,樂隊(duì)奏兩國(guó)國(guó)歌。這時(shí)已經(jīng)在現(xiàn)場(chǎng)的服務(wù)員,都要原地肅立,停止一切工作。在主、賓起座時(shí),主賓桌的服務(wù)員要隨時(shí)照顧,現(xiàn)場(chǎng)的其它服務(wù)員要有秩序的回避兩側(cè),保持場(chǎng)內(nèi)安靜。
主賓桌負(fù)責(zé)讓酒的服務(wù)員,要提前斟好一杯酒,放在小型酒盤內(nèi),站立在講臺(tái)一側(cè),致辭完畢立即端上,以應(yīng)賓、主舉杯祝酒之用,并跟隨照顧斟酒。
國(guó)宴一般是晚上舉行,時(shí)間為一個(gè)半小時(shí)左右,入座前已擺好冷盤,每個(gè)人有四五種冷菜,一般是素菜、葷菜,有鴨掌、醬牛肉、素火腿等。為了保證菜點(diǎn)的質(zhì)量(火候、色澤、溫度等),使賓客吃得可口滿意,服務(wù)員要恰到好處地掌握上菜的時(shí)機(jī)和速度。這就需要服務(wù)人員要熟悉本次宴會(huì)各種菜點(diǎn)的風(fēng)味、火候和烹調(diào)所需的時(shí)間,做到心中有數(shù),適時(shí)上菜,期間要及時(shí)與廚房互通情況。上熱菜前,先上湯,然后是上葷菜、素菜,第一道菜,往往是最為名貴的,熱菜一般是三葷一素,菜都是用小車從廚房推出來。
國(guó)宴不是四個(gè)菜同時(shí)上,而是等賓客吃完一道菜后,就有專門看桌子的服務(wù)員及時(shí)換下道菜。主菜上完,再上甜點(diǎn)、水果,水果是根據(jù)季節(jié),有獼猴桃、葡萄、西瓜等,一般不固定某一種。每次用完餐,服務(wù)員都對(duì)桌布、筷子,進(jìn)行清洗、消毒,盤子,碗等炊具也一樣,以前,主要靠蒸、燙等進(jìn)行消毒。如今,用洗碗機(jī),去污、消毒,全部自動(dòng)化。
國(guó)宴迎賓冷頭盤
國(guó)宴:“開水白菜”
嚴(yán)格地說來,這道菜應(yīng)該叫“清湯白菜”,以“開水”命名,一是因看起來清湯如水,更多的是噱頭。
1、說是白菜,其實(shí)只取大白菜中間的那點(diǎn)發(fā)黃的嫩心,將熟未透時(shí)的白菜心是最好的。
2、所謂“開水”,是將雞、鴨、云南宣威火腿上的蹄子、排骨、干貝等鮮貨分別入沸水鍋中,除清血水和雜質(zhì)撈出再洗凈,一起放入湯鍋內(nèi),加入足量清水、姜、蔥,燒開后打去浮沫,加料酒,改用小火保持微開不沸,慢慢地熬至湯出鮮味(至少4個(gè)小時(shí))。
3、將凈雞脯肉打成茸,用涼的鮮湯把肉茸攪成豆?jié){狀,倒入燒開的鮮湯中,這時(shí)鮮湯會(huì)出現(xiàn)奇妙的景觀:湯中的雜質(zhì)爭(zhēng)先恐后地吸附在肉茸上,慢慢地形成一個(gè)球狀物,10分鐘左右將球狀物撈起,棄而不用。如此反復(fù)2-3次,直到把湯“清”得如開水般透澈。
4、微黃的“開水”做成,把白菜心放入沸水中斷生,再用清水漂冷,去盡菜腥后放入漏勺中,用“開水”自上淋下,直至白菜燙熟,燙過白菜的“開水”則另作他用,不能用回開水白菜之中。將燙好菜心墊在湯盆底,輕輕倒入“開水”,即成。
國(guó)宴:罐燜三寶鴨
這是一道非常名貴的經(jīng)典國(guó)宴菜,此菜選用精選優(yōu)質(zhì)填鴨與板粟、小棗、蓮子燉煮后,裝入國(guó)宴專用特制紫砂罐內(nèi)蒸熟,具有很好的養(yǎng)生保健功效。

紅花魚翅撈飯
