2011年全省旅游飯店服務(wù)技能大賽工作方案
根據(jù)2011年全省旅游監(jiān)管工作會(huì)議的部署安排,省旅游局決定舉辦2011年全省旅游飯店服務(wù)技能大賽?,F(xiàn)制定工作方案如下。
一、目的意義
2011年全省旅游飯店服務(wù)技能大賽以“展示形象風(fēng)采,促進(jìn)學(xué)習(xí)交流,強(qiáng)化職業(yè)技能,提升服務(wù)質(zhì)量”為宗旨,以提高全省旅游飯店行業(yè)整體發(fā)展水平,加快建設(shè)湖南旅游強(qiáng)省為目標(biāo),認(rèn)真貫徹落實(shí)2011年全省旅游監(jiān)管工作會(huì)議精神,全面展示我省旅游飯店行業(yè)的發(fā)展成果和旅游飯店從業(yè)人員的精神風(fēng)貌,增強(qiáng)旅游飯店飯店及從業(yè)人員的服務(wù)意識(shí)、質(zhì)量意識(shí)和標(biāo)準(zhǔn)意識(shí),促進(jìn)旅游飯店從業(yè)隊(duì)伍素質(zhì)和旅游飯店發(fā)展水平的整體提升。
二、組織領(lǐng)導(dǎo)
全省旅游飯店服務(wù)技能大賽分市州初賽和省級(jí)決賽兩個(gè)階段進(jìn)行。省旅游局成立“2011年全省旅游飯店服務(wù)技能大賽”組委會(huì)(以下簡(jiǎn)稱“組委會(huì)”),負(fù)責(zé)整個(gè)賽事活動(dòng)的組織領(lǐng)導(dǎo)。組委會(huì)主任由省旅游局局長(zhǎng)楊光榮擔(dān)任,省旅游局領(lǐng)導(dǎo)劉之明、劉綿松、熊健、高揚(yáng)先、王舜良、卜越輝、尚斌等任副主任,劉之明執(zhí)行主任。省旅游局相關(guān)處室(單位)負(fù)責(zé)同志為成員,組委會(huì)辦公室設(shè)行業(yè)管理處,負(fù)責(zé)大賽的各項(xiàng)具體工作。各市州旅 1
游局要相應(yīng)成立全省旅游飯店服務(wù)技能大賽市州選拔賽組委會(huì),具體負(fù)責(zé)本次大賽市州選拔賽的組織工作和參賽選手的推薦上報(bào)工作。
三、比賽項(xiàng)目
比賽項(xiàng)目為:前廳服務(wù)(前廳行李員及接待員服務(wù))、客房服務(wù)(中式鋪床)、餐廳服務(wù)(中餐宴會(huì)擺臺(tái))、餐廳服務(wù)(西餐宴會(huì)擺臺(tái))、調(diào)酒師服務(wù)(雞尾酒調(diào)制)、保安員服務(wù)(車輛指揮及消防、保安技能)6個(gè)項(xiàng)目,涉及7個(gè)服務(wù)崗位。
四、參賽選手條件
各參賽選手應(yīng)是飯店合同制員工,在旅游星級(jí)飯店服務(wù)崗位工作一年以上,熱愛本職工作,具有良好的職業(yè)道德素質(zhì)和職業(yè)技能水平,外語水平較好,無不良行為及投訴記錄
五、參賽報(bào)名
以市州為單位組團(tuán)參賽。根據(jù)各市州旅游星級(jí)飯店的數(shù)量結(jié)構(gòu)分配參賽選手名額(附件二),各市州在組織選拔賽的基礎(chǔ)上確定參加全省大賽的選手,并由領(lǐng)隊(duì)、教練(各1人)和選手組成市州參賽團(tuán)(報(bào)名表附三)。報(bào)名截止時(shí)間為6月30日。
六、比賽內(nèi)容
1、儀容儀表(10分):主要考察選手的儀容儀表是否符合旅游行業(yè)的基本規(guī)范及崗位要求。在選手進(jìn)行相關(guān)項(xiàng)目比賽時(shí),由評(píng)委進(jìn)行實(shí)時(shí)評(píng)分。
2、外語水平(5分):主要考察選手服務(wù)崗位常用英語口語表達(dá)能力。比賽方式為選手與評(píng)委進(jìn)行現(xiàn)場(chǎng)交流對(duì)話。
3、崗位知識(shí)及應(yīng)變能力(5分):以回答問題形式考察選手服務(wù)崗位應(yīng)知應(yīng)會(huì)的知識(shí)和技能,以及服務(wù)應(yīng)變能力。
外語水平、崗位知識(shí)及應(yīng)變能力考察設(shè)單獨(dú)考場(chǎng)進(jìn)行。
4、現(xiàn)場(chǎng)操作(80分):
(1)前廳接待服務(wù)(時(shí)間為8分鐘):主要考察行李員和前臺(tái)接待員服務(wù)的規(guī)范性、熟練性、靈活性。
(2)中式鋪床(時(shí)間為3分鐘):主要考察選手操作的熟練性、規(guī)范性。
(3)中餐宴會(huì)擺臺(tái)(時(shí)間為15分鐘):主要考察選手操作的熟練性、規(guī)范性、美觀性。
(4)西餐宴會(huì)擺臺(tái)(時(shí)間為15分鐘):主要考察選手操作的熟練性、規(guī)范性、美觀性。
(5)雞尾酒調(diào)制(規(guī)定調(diào)制、自創(chuàng)調(diào)制各為5分鐘):主要考察選手操作的熟練性、創(chuàng)造性。
(6)保安服務(wù)(選手完成為止):主要考察選手的應(yīng)變能力和技能操作的熟練性、規(guī)范性。
每位選手的最后比賽成績(jī)?yōu)樯鲜?、2、3、4項(xiàng)之和,每個(gè)代表隊(duì)的最后比賽成績(jī)?yōu)樗袇①愡x手的平均成績(jī)。
各個(gè)項(xiàng)目的“比賽規(guī)則及評(píng)分標(biāo)準(zhǔn)”見附四。
外語水平、崗位知識(shí)及應(yīng)變能力考察不設(shè)試題庫。
七、時(shí)間安排
(一)宣傳發(fā)動(dòng)階段(2011年5月)。各市州旅游局在接到省局文件后,要進(jìn)行廣泛宣傳發(fā)動(dòng),充分調(diào)動(dòng)各旅游星級(jí)飯組織
參賽的積極性。各飯店要在開展技能比武的基礎(chǔ)上,向市州旅游局推薦參加市州初賽的優(yōu)秀選手。
(二)市州初賽階段(2011年5-6月)。各市州旅游局組織初賽。初賽辦法由各地自行確定。各地經(jīng)初賽選拔后按照省里要求組成代表隊(duì)參加全省旅游飯店技能大賽。
(三)全省大賽階段(2011年7月)
1.時(shí)間地點(diǎn):2010年7月長(zhǎng)沙市舉行(預(yù)計(jì)2天時(shí)間,具體時(shí)間地點(diǎn)另行通知)
3.費(fèi)用:各代表隊(duì)參加比賽選手(包括領(lǐng)隊(duì)、教練)的交通費(fèi)由各代表隊(duì)負(fù)責(zé),比賽期間的食宿、場(chǎng)地等比賽費(fèi)用由大賽組委會(huì)承擔(dān)(長(zhǎng)沙市選手不安排住宿和早晚餐)。
4、比賽工具和用品:大賽組委會(huì)統(tǒng)一提供基本的比賽工具和用品,特殊工具和用品均由選手自備。
5、評(píng)委:由大賽組委會(huì)在全省星評(píng)員隊(duì)伍中選聘,根據(jù)比賽項(xiàng)目需要邀請(qǐng)交警、消防部門人員共同組成評(píng)審組(其中,推薦1人擔(dān)任組長(zhǎng))。
6、監(jiān)督:為確保大賽的公平、公正,組委會(huì)監(jiān)審組現(xiàn)場(chǎng)監(jiān)督。
(大賽操作流程另行制定)。
八、獎(jiǎng)項(xiàng)設(shè)置
(一)單項(xiàng)獎(jiǎng)。各個(gè)單項(xiàng)獎(jiǎng)按選手得分高低取前16名(允許并列),其中一等獎(jiǎng)2名、二等獎(jiǎng)4名、三等獎(jiǎng)10名。其他選手由大賽組委會(huì)授予優(yōu)秀獎(jiǎng)。參賽選手在大賽中所取得的成績(jī),將作為評(píng)選全省旅游行業(yè)崗位明星的重要參考依據(jù)。
(二)團(tuán)體獎(jiǎng)。以代表隊(duì)得分排序,取前6名,其中一等獎(jiǎng)1個(gè)、二等獎(jiǎng)2個(gè)、三等獎(jiǎng)3個(gè)。獲獎(jiǎng)單位將由大賽組委會(huì)授予相應(yīng)的獎(jiǎng)牌和獎(jiǎng)杯。
(三)組織獎(jiǎng)。大賽設(shè)組織獎(jiǎng)若干名。組織獎(jiǎng)根據(jù)各代表隊(duì)組織發(fā)動(dòng)范圍、初賽情況、賽場(chǎng)紀(jì)律、文明禮貌等情況考核確定。
九、工作要求
2011年全省旅游飯店服務(wù)技能大賽是2011全省旅游監(jiān)管工作會(huì)議部署安排的一項(xiàng)重要工作,各市州旅游局、各旅游飯店要統(tǒng)一思想,高度重視,精心組織,務(wù)求實(shí)效。要以舉辦技能大賽為契機(jī),進(jìn)一步促進(jìn)旅游飯店行業(yè)積極開展崗位練兵和技能培訓(xùn),切實(shí)提高飯店行業(yè)從業(yè)人員素質(zhì)技能,全面提升旅游飯店服務(wù)質(zhì)量,為促進(jìn)全省旅游業(yè)又好又快發(fā)展做出新的貢獻(xiàn)。

韶關(guān)市旅游飯店服務(wù)技能大賽
為實(shí)現(xiàn)酒店提檔升級(jí),努力提高酒店服務(wù)人員服務(wù)技能,提升酒店接待能力。2010年4月28日,由韶關(guān)市旅游局主辦、韶關(guān)市旅游協(xié)會(huì)、韶關(guān)市餐飲烹飪協(xié)會(huì)協(xié)辦的2010年韶關(guān)市旅游飯店服務(wù)技能大賽在韶關(guān)市流花賓館舉行。
我酒店由總經(jīng)理陸邦美任教練、由人事經(jīng)理朱德玉任領(lǐng)隊(duì),選送了中餐部長(zhǎng)聶文英、西餐服務(wù)員羅金花、客房領(lǐng)班肖業(yè)蓮代表本酒店參賽。
比賽當(dāng)天,來自韶關(guān)周邊地區(qū)各酒店、飯店的50多名餐廳工作人員、客房服務(wù)人員參加了比賽。按照要求,評(píng)委對(duì)選手的儀容儀表、外語水平、現(xiàn)場(chǎng)操作三項(xiàng)作綜合考評(píng)。
中餐宴會(huì)擺臺(tái)對(duì)擺放餐具、折疊十種餐巾杯花,擺座椅等環(huán)節(jié)進(jìn)行考核??己诉x手操作的熟練性、規(guī)范性、美觀性。
中式鋪床內(nèi)容包括鋪床單、套被芯、被子定位、套枕套、枕頭定位等。
在比賽現(xiàn)場(chǎng),聶文英、羅金花、肖業(yè)蓮憑借多年的工作經(jīng)驗(yàn)和平時(shí)的勤奮練習(xí),均在規(guī)定時(shí)間內(nèi)非常嫻熟地完成了各項(xiàng)程序。

烹飪技能冷拼項(xiàng)目褚紅燦先生榮獲“金牌烹飪名師”榮譽(yù)稱號(hào),參賽作品:鷸蚌相爭(zhēng)拼福祿壽喜圍碟。各種熟制食材拼成看盤和圍碟,配以果醬畫,食之口味層次分明,營養(yǎng)搭配合理,視之顏色豐富多彩賞心悅目!

一、專業(yè)知識(shí)題(附答案要點(diǎn))
1、簡(jiǎn)述預(yù)訂服務(wù)流程。
預(yù)訂受理與確認(rèn),預(yù)訂資料記錄與修改,預(yù)訂錄入與檢查,賓客抵店前準(zhǔn)備,預(yù)訂資料存檔。
2、已預(yù)訂的客人抵達(dá),但飯店無法提供其預(yù)訂了的房間類型,該如何處理? 視客人預(yù)訂類別不同分別對(duì)待:對(duì)臨時(shí)或等候類賓客可在其他客人取消預(yù)訂或提前離店的情況下,又予以優(yōu)先安排;確認(rèn)類和保證類客人則應(yīng)將房間升級(jí)或找同等檔次的飯店,保證類客人在其他飯店的第一夜房費(fèi)由飯店代付。

飯店的客房隨著賓客的入住、離店等情況處于各種狀態(tài)之中,只有掌握并控制好飯店實(shí)時(shí)狀態(tài),才能準(zhǔn)確、高效地進(jìn)行客房銷售。
7、客人如要用信用卡付賬,如何判斷是否能受理該卡?
首先檢驗(yàn)客人所持食用卡是否屬于在本飯店可以使用的信用卡,有無殘缺、破損及有效期限,然后請(qǐng)客人在簽購單上簽名,并仔細(xì)核對(duì)上述情況和客人的簽名。

受理訪客留言,將三聯(lián)留言分別放在總臺(tái)、送至總機(jī)和客房。送至客房的留言應(yīng)裝入信封。開啟留言燈。
14、外幣兌換時(shí)的水單是做什么用的?
兌換水單是按當(dāng)日外匯牌價(jià)換算并填制的,摘抄有賓客的姓名和證件號(hào),賓客在中國境內(nèi)沒有用完兌換來的人民幣,可憑此單在銀行換回本國貨幣。

17、客人的預(yù)付款金額不足時(shí),如何采取措施?
應(yīng)通過電話或通知單的形式,告知賓客前來付賬,以免發(fā)生欠款太多的現(xiàn)象。
18、如何避免賓客逃賬,如若發(fā)生,怎么處理?
對(duì)超限額消費(fèi)的客人進(jìn)行催收費(fèi)用。密切注意簽單額度大的賬戶。證實(shí)逃賬的客人要報(bào)告給保安部以決定是否需要立案?jìng)刹椤?/p>
